You're better off going for a handheld mic so the audience can hear your volunteers when you point the mic at them.
I have a dual channel system which enables me to use a headset (or lapel) and a handheld at the same time, but that gets expensive!
You're looking for a diversity receiver (AKG, Shure or Sennheiser are good) with the ability to switch frequencies.
If you insist on a headset, the best thing to do is buy one of the above so you have the beltpack transmitter, but replace the mic with a "discreet headset mic" (Google it) One with both earhooks and the correct connection for your beltpack transmitter.

Preferably a simple A4 cuesheet and someone to push the buttons on a CD player!
BUT
I've recently started using a Iomega Screenplay TVLink for smaller gigs (and one or two larger ones) which enables me to remote control from the stage, as long as I can place it nearby.
I chose it because although it's designed to play music and/or videos from a USB stick/drive on your TV, it has a nice simple interface which you can "run blind" (without a TV) and will begin to autoplay a playlist when you first switch it on.
