French Onion Soup!

I never realized how easy this is to make.

  • 1/2 onion sliced or chopped
  • 1 tsp butter (I have used oil and such..but butter tastes better!)
  • 2 cups beef broth
  • 1 cup water
  • 1 rounded teaspoon beef bullion (Wylers) or one beef bullion cube.
  • 1 tsp sugar

Melt butter in quart size sauce pan and add chopped/sliced onion and sugar

(sugar helps to caramelize the onions faster). Cook until onions are browned.

Add beef broth, water, and bullion.

Simmer for 10 min. Then its ready to eat.

For the deluxe version; put a slice of toasted french bread on top of soup and cover with Provolone cheese (the bread keeps the cheese from sinking) and put in broiler til cheese starts to brown.

Yum!

Great Salsa!

Open these three cans...dump all in blender..."bump" blender 4 times just to break up the tomatoes...pour in bowl and grab the chips!

Ingredients: 1 can Diced tomatoes with garlic and onion (Del Monte)
1 can Diced tomatoes with lime juice and cilantro (Ro-Tel)
1 can Diced tomatoes with green chilies (cheapest you can find)

Mc Cormick has a new seasoning out called Fiery 5 pepper it is awesome. It is kind of like a Cajun style seasoning, but with an excelent blend of seasonings mixed together.

 Cranberry Salsa


4 cups frozen or fresh cranberries


2 cups water


4 cups sugar


4 jalapenos or any type of peppers, finely chopped


1 medium onion, chopped


1 tsp cumin


2 tsp dried cilantro or 1/2 bunch fresh cilantro chopped


1 small lime (just the juice)


makes 5-7 pints of salsa


Heat water, sugar in pan for 5 to 10 minutes to reduce down, (not a rolling boil, just a basic simmer so that sugar dissolves).Add the rest of ingredients and cook for 20 to 25 minutes longer if you want a jam consistency.  Cranberries should start to pop and the mixture will have thickened.  Fill jars to 1/4 inch of rim.  Place lids on and then process in water bath for approx. 10 minutes.  Remove jars, let cool and check to make sure lids are not popped up.  Store for up to 6 months.

Recipe for Michael E's Amazing "Secret Ingredient"- Chicken Noodle Soup

 

Put 2 1/2 cups of water into a large pot. Pluck chicken,clean chicken, cook chicken, chop celery, dice onion and carrot. Add vegetables, noodles, and seasonings. Then add one clean Ellnerian "rolling stone" (for that distinct chicken flavor). Simmer and, viola! The best tasting chicken noodle soup money can buy!

Spell Binders

1 1/2 cups flour
1 1/2 t. Baking powder
1 t. Soda
1 cup firmly packed brown sugar
1 cup soft butter
1 egg
1 cup quick cooking rolled oats
1 cup flaked coconut
1 cup salted Spanish peanuts
1/2 cup finely crushed cornflakes

Mix flour, baking powder and soda. Gradually add sugar to butter in bowl. Cream until light and fluffy. Add egg. Beat well. Gradually add dry ingredients. Blend well after each addition. Stir in rolled oats, coconut, peanuts and corn flakes. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Flatten slightly with bottom of glass dipped in additional crushed cornflakes. Bake at 350 for 12 to 15 minutes. Drizzle with icing.
Icing:
Melt 2 T. Butter in 2 cup measure. Add 1 cup powdered sugar, 1 T. Hot water and 1 t. Vanilla extract. Beat until consistency of glaze. If needed, thin with a few drops hot water. Makes 48

Steak lovers basting sauce. Keeps the meat moist and juicy.

 

Mix equal portions of olive oil, soy sauce, and Worcestershire sauce with

1 clove crushed garlic (you can use 1 tsp Lawry's garlic salt if in a hurry)

 

This is to be used to baste steaks while they are on the grill, instead of doing a marinade. I put it in a small bowl and use a spoon to spread it on the cooking meat (after you turn the meat for the first time) so I can re-stir in the separated olive oil each time.

 

This ROCKS!

Best Bombshell Brownies

Ingredients
1 cup butter, melted
3 cups white sugar
1 tablespoon vanilla extract
4 eggs
1 1/2 cups all-purpose flour
1 cup unsweetened cocoa powder
1 teaspoon salt
1 cup semisweet chocolate chips

Directions
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 baking dish.
Combine the melted butter, sugar, and vanilla in a large bowl. Beat in the eggs, one at a time, mixing well after each, until thoroughly blended.
Sift together the flour, cocoa powder, and salt. Gradually stir the flour mixture into the chocolate mixture until blended. Stir in the chocolate morsels. Spread the batter evenly into the prepared baking dish.
Bake in preheated oven until an inserted toothpick comes out clean, 35 to 40 minutes. Remove, and cool pan on wire rack before cutting.

A little something to warm you up during the cold winter months

Country-style Pea Soup Recipe

Ingredients:
8 oz dried peas
1 medium onion - peeled and finely diced
2 medium carrots - peeled (if necessary) and finely diced
2 leeks - chopped
4 rashers bacon
Salt and pepper
Method:
Soak the dried peas in 1 pint of cold water for about 8 hours
(preferably overnight).
Cut the bacon into small pieces and fry in butter along with the diced
onion.
When browned, add the other vegetables and toss. Continue to simmer for
a minute or two.
Drain the peas and put them into a pot with 2 pints of water or
vegetable stock.
As soon as the peas begin to boil, add the bacon/onion/veg mix to the
pot and season with salt and pepper.
Cover and simmer until done, stirring occasionally.
Serves 4 - Stirring in a little cream or full milk towards the end gives
a richer soup.
